Matcha is typically categorized into three main grades based on harvest time, leaf quality, and intended use:

1. Ceremonial Grade

This is the highest-quality matcha, used in traditional tea ceremonies.


It is harvested from the first flush (early spring) and consists of the youngest, most tender top leaves. The leaves are shade-grown to maximize L-theanine and chlorophyll, then carefully stone-ground.


Ceremonial grade matcha is known for its vibrant green colour, fine texture, smoothness, naturally sweet, umami flavour, and high levels of nutrients, particularly L-theanine and chlorophyll.


2. Premium Grade

Often used interchangeably with high-end culinary matcha, premium grade comes from later spring harvests or a blend of the first and second harvest leaves. While still good quality, its colour is bright green but slightly duller than ceremonial grade. The flavour may be slightly bitter or grassy.


3. Culinary Grade

Typically harvested in summer, this grade uses mature leaves from the lower parts of the plant. It has a bolder, more astringent flavour and a duller colour, making it ideal for baking, cooking, or recipes that incorporate matcha with other ingredients.
