Black Tea is probably the most known and loved tea in the western world. There are four varieties and they all come from the leaves of Camellia sinensis. Black tea is more oxidized then green tea, oolong and white tea. Black teas are generally stronger in flavor and usually contain more caffeine then the less oxidized teas. Black teas taste great alone, or with milk, sugar or honey. They also make excellent Ice Tea.
Long before the western world appreciated the benefits of green tea, China and Japan have been enjoying the benefits of green tea for more then 3,000 years Unlike Black Tea, Green Tea has more antioxidants since the leaves are un-oxidized. Oxidation lowers the levels of antioxidant present in the final tea. There are numerous Green Tea benefits. Preparing, serving, and drinking green tea followed an elaborate process.

A tale tells of a man named Wu Liang (later corrupted to Wu Long, or Oolong) who discovered oolong tea by accident when he was distracted by a deer after a hard day's tea-picking, and by the time he remembered about the tea it had already started to oxidize. White tea is the uncured and un-oxidized tea leaf, so it is very high in antioxidants and very low in caffeine. Like green, oolong and black tea, white tea comes also from the Camellia sinensis plant. Oolong and black teas are oxidized before curing. White tea is the tea that is made from new buds and very young, very gently dried tea leaves. Because of the careful and light processing, the leaves retain all their contents of antioxidants. White teas are appreciated by tea connoisseurs for their unmatched subtlety, complexity, natural sweetness, and delicacy. The appearance of the leaves is unaltered. Least processed (steamed and dried).
